Sunflower Cacao Protein Bites

Have you ever seen something and thought: "I have no clue what I'm going to do with this but I want it!". Well, I have and I did. Sunflower seed butter...mhm. By itself, it didn't really taste like anything special. #sadfaceemoji
As with everything I buy, I feel guilty about throwing stuff away because landfills are too full, people are too hungry, and money doesn't grow on trees. So, creative hat on, this recipe was born.
Sunflower seed butter has a distinct nuttiness (even though it's a seed, not a nut) that pairs magically with the bitterness and depth of cocoa. These bites are so rich, you only need one to feel the happy buzz.
Maybe two if you're having a really bad day.

Ingredients:
80 g dry quick-cooking oats
60 g honey
60 g VitaFiber IMO syrup (can use honey instead)
30 g unflavored egg white protein powder (or any other protein powder)
1 flax egg (7 g flax seed meal combined with 3 Tbsp hot water)
15 g unsweetened cocoa powder
14 g hemp seeds
14 g sunflower seeds
120 g unsalted/unsweetened sunflower butter
Directions:
In a microwave safe bowl, combine honey, VitaFiber, and sunflower seed butter. Microwave for 15 seconds.
With a handheld or stand mixer, mix in oats, protein powder, flax egg, coconut flakes, and chocolate chips into the bowl.
Form mixture into 14 balls and refrigerate for 30 minutes to harden.
Best if stored in the refrigerator in an air-tight container. Can be frozen.
Macros per Serving (14): 15 g of carbs | 7 g of fats | 6 g of protein
